High Fibre, Beef Lasagne

This was my first time making a lasagne and tbh, I think its going to be a staple of mine for years to come!!!




Servings; 6


Ingredients

2 Celery Sticks

1 Chunky Carrot Grated

1 Courgette (zucchini) Grated

1 Red Pepper

1 Red Onion

1 Tsp Olive Oil

750g 5% Beef Mince


Lloyd Grossman Lasagne Sauce *Slightly cheating but the macros looked good! 6 Lasagne Sheets (Depending on size of the baking dish)

For the White Sauce

50g Butter

50g Plain Flour

450ml Semi Skimmed Milk

50g Cheese (Grated)



Method


  1. In a large pan, heat the olive oil over a low heat. Fry the grated carrot, courgette & diced onion, celery and pepper for 5 mins, or until softened. Add the mince and continue to fry on a medium heat.

  2. Stir in the lasagne sauce & simmer for 15 mins, or until the liquid has reduced. *Season (I used pepper & chilli flakes)

  3. Meanwhile, make the white sauce. Melt the butter in a small saucepan over a low heat and add the flour. Whisk until combined and cook on low for 1-2 mins. Remove from the heat and gradually whisk in the milk until you have a sauce, then add in the grated cheese.

  4. Preheat the oven to gas 6, 200°C, fan 180°C.
